Vegetarian Chili Beans

I was making some black beans and decided to make my version of vegetarian chili beans.  Here’s what you need:

  • 1/2 Bag of Black Beans
  • 1/2 Bag of Beyond Meat
  • Frozen of veggies (3 cups)
  • Frozen bag of onions and red peppers (2 cups)
  • Trader Joe’s Habanero Hot Sauce(3 tablespoons)

I soaked half the bag of black beans over night.  After the soak I rinsed the beans then added 8 cups of water and placed them back in the pot.  I then added the rest of the ingredients and cook them on a low flame for 2 hours then drained everything.  I tried my best to do the calculations and the whole pot is around 1,170 calories, 173 grams of carbs and 1190 grams of sodium.  I know that sounds like a lot but this portion comes out to about 5 servings with each serving containing 234 calories, 34 grams of carbs and 238 grams of sodium.  Next time I am going to put less fake meat inside to lower the sodium intake.  If you try this out PLEASE comment below and let me know how it came out!
